Oh I do Love Soup!

It’s so comforting and versatile!  I would be happy to eat soup every week day during winter (Anything goes on the weekend!! hahaha!!)

I was thinking about soup this week.  My thoughts made me laugh but they also made me cry.  I thought about my dear friend and colleague, Simona, who would ask me on a daily basis, “What are you having for lunch?  Soup?”  That’s right – 9 times out of 10, it’s gonna be soup!! Soup of the (every) day!! lol!!

Then I thought of the best soup maker I know – my dad!  He made soup for every occasion – when you needed cheering up, when you needed something to warm you up, when you needed to use up ingredients before they spoiled, a quick fix to push hunger away, for starters, main courses, every opportunity – we had a hearty soup.  Dad’s soup had so many gorgeous elements.  My mum wasn’t a fan.  She said his soups were too “mix up, mix up!”  She especially got annoyed when she had soup simmering on the stove and dad would lift the lid, adding beans, lentils, vegetables and anything he could find.  Mum would say, “Nooooooo, I don’t like mix up, mix up!!!!”

I remember dad telling a story of traveling to the USA when his mother was dying.  Once he arrived at her home, he immediately went into the kitchen to make soup.  Soon after everyone ate, his mother died.  He believed that she held on to life so that he could be there.  His gift of soup was the perfect way for dad to show his love.  Preparing soup was his love language.

I’d really love to eat one of my dad’s soups.  I can imagine him preparing it with love.
